Gastronomia stellata al Castello Saint-Jean
A Montluçon, nella regione francese dell’Alvernia-Rodano-Alpi, troviamo Château Saint-Jean, situato nel cuore di un’eccezionale architettura medievale con il suo ristorante gourmet La Chapelle, stellato nella Guida Michelin e triplo toqué in Gault & Millau. Prima di diventare questa eccezionale struttura, nel XII secolo consisteva in una commenda dei Templari, infatti, era una tappa che si trovava sulla strada collegante la Valle dello Cher all’ex strada romana Bourges-Néris les Bains. L’ex commenda templare ha incuriosito i nuovi proprietari, Nicole e Jean-Claude Delion, i quali si sono impegnati nella restaurazione dell’edificio storico a partire dal 2016. Il designer, Patrick Jouin e Sanjit Manku, un architetto, si sono impegnati nella realizzazione dell’area reception, il bar e “La Chapelle”, il ristorante gourmet dello Château. Tutto questo ha portato alla costruzione di un hotel di lusso a cinque stelle caratterizzato da eleganza e raffinatezza.
L’attività accoglie i propri ospiti in una delle 19 camere progettate da un designer di Lione affacciate sul Parc Saint-Jean. Le suite sono state dislocate su tre piani dove troviamo sia la parte contemporanea che quella rinascimentale del castello. Nella prima zona troveriamo le suite, 7 in numero, oltre alle camere classic e superior. Le suite di lusso si trovano nella seconda parte. Tutte hanno una decorazione chic contemporanea, moquette spessa, pittura floreale antica, busto di scultura di cavallo su librerie (un cenno all’ippodromo situato accanto al castello).
Al secondo piano, i balconi corrono lungo le camere da letto e al terzo, le camere mansardate conferiscono un posto d’onore al design raffinato. Tutti hanno una vista diretta sul parco sublime e i bagni sono dotati di prodotti Fragonard. Ogni angolo e ogni dettaglio è garanzia di un servizio perfetto, elegante. Ogni camera dispone di una macchina da caffè Nespresso.
Passando per il ristorante La Chapelle, lo chef Olivier Valade e il suo team, con i loro piatti pongono l’attenzione sui prodotti della ricca regione circostante. Questo cuoco ha un invidiabile curriculum vitae. Il tempo passato in cucine prestigiose ha formato il giovane fin dai suoi esordi nella professione. Un servizio militare nella cucina del Presidente del Consiglio, all’hotel Matignon; poi sous-chef al Relais Bernard Loiseau, a Saulieu, una visita al ristorante Hélène Darroze a Parigi e il ristorante Le Divellec, in cui era secondo in cucina.
La struttura propone anche uno spazio dedicato al relax, infatti, è presente la SPA, composta da un hammam, una doccia sensoriale, una vasca idromassaggio e una piscina con nuoto controcorrente con vista sull’ippodromo, per regalare momenti di dolce benessere, con trattamenti ispirati alle migliori tecniche di rilassamento.
In questa zona si respira un’atmosfera zen grazie agli spazi luminosi che vengono messi in risalto da pareti di pietra bianca e dalle grandi vetrate che si affacciano su un giardino di erbe e piante aromatiche. Inoltre, troviamo anche una palestra per e una grande sala massaggi.

In Montluçon, in the French region of Auvergne-Rhône-Alpes, we find Château Saint-Jean, located in the heart of exceptional medieval architecture with its gourmet restaurant La Chapelle, starred in the Michelin Guide and triple toqué in Gault & Millau. Before becoming this exceptional structure, in the 12th century it was a commandery of the Templars, in fact, it was a stop on the road connecting the Cher Valley to the former Roman road Bourges-Néris les Bains. This former Templar commenda intrigued the new owners, Nicole and Jean-Claude Delion, who have been involved in the restoration of the historic building since 2016. The designer, Patrick Jouin and Sanjit Manku, an architect, are involved in the construction in the reception area, the bar and “La Chapelle”, the Château’s gourmet restaurant. All this has led to the construction of a five-star luxury hotel characterized by elegance and refinement.
The business welcomes its guests in one of the 19 rooms designed by a Lyon designer overlooking the Parc Saint-Jean. The suites have been spread over three floors where we find both the contemporary and the Renaissance part of the castle. In the first area we find the suites, 7 in number, in addition to the classic and superior rooms. The luxury suites are located in the second part.
All have contemporary chic decor, thick carpeting, antique floral painting, horse sculpture bust on bookshelves (a nod to the racecourse located next to the castle). On the second floor, the balconies run along the bedrooms and on the third, the attic rooms give a place of honor to the refined design. All have direct views of the sublime park and the bathrooms are equipped with Fragonard products. Every corner and every detail is a guarantee of a perfect, elegant service. Each room has a Nespresso coffee machine.
Passing through the La Chapelle restaurant, chef Olivier Valade and his team focus their dishes on products from the rich surrounding region. This chef has an enviable CV. The time spent in prestigious kitchens has formed the young man since his beginnings in the profession. A military service in the kitchen of the Prime Minister, at the Matignon hotel; then sous-chef at the Relais Bernard Loiseau, in Saulieu, a visit to the Hélène Darroze restaurant in Paris and the Le Divellec restaurant, where he was second in the kitchen.
The structure also offers a space dedicated to relaxation, in fact, there is the SPA, consisting of a hammam, a sensory shower, a Jacuzzi and a swimming pool with counter-current swimming with a view of the racecourse, to give moments of sweet well-being, with treatments inspired by the best relaxation techniques. In this area you can breathe a Zen atmosphere thanks to the bright spaces that are highlighted by white stone walls and large windows that overlook a garden of herbs and aromatic plants. In addition, we also find a gym for and a large massage room.
